I made this for myself one night when Huck was out of town.
- 1 4 oz Salmon Filet
- 1/2 tsp Rosemary-Chopped
- 1 tsp Olive Oil
- 1/2 tsp Garlic
- Salt and Pepper to taste
- Preheat oven to 350
- Combined Rosemary, oil, garlic, and salt and pepper.
- Rub mixture onto fish.
- Bake fish, on baking sheet, 12-15 minutes until fish will flack off easily with a fork.
- 1/2 Cup Broccoli
- 1/2 Cup Cauliflower
- 1 tsp Olive Oil
- Salt and Pepper to taste
- Preheat oven to 350
- Toss vegetables with oil and salt and pepper.
- Place on baking sheet in oven for 12-15 minutes or until tender.
Risotto
- 1/2 Cup Arborio Rice
- 1 Cup Chicken Stock
- 2 Tbsp White Wine
- 2 Tbsp Onion-Chopped
- 1 tsp Garlic-Chopped
- 1 tsp Oil
- 1 tsp Butter
- 1 Tbsp Parmesan Cheese- Grated
- Salt and Pepper to Taste
- Heat stock in pan over medium low heat.
- Add oil to another pan over medium heat. Add garlic and onions and saute until soften.
- Add rice and coat with oil.
- Add wine and ladle stock in a few Tbsp at a time. Stir rice. Add more liquid when rice appears dry. Continue to stir rice.
- When all the stock is added, stir in butter, Parmesan cheese and salt and pepper.
