Wild Rice and Apple Stuffed Pork Chops
- 2 Pork Chops-Butterflied
- 3/4 Apple-Chopped
- 1/4 Onion-Diced
- 1/4 Cup Wild and Brown Rice Mix
- 2 Tbsp Pecans-Toasted and Chopped
- 2 Tbsp Flour
- 2 tsp Oil
- Salt and Pepper to Taste
- Preheat oven to 400 degrees.
- Cook rice according to package directions.
- Saute onions and apples and combine with cooked rice and nuts.
- Season pork with salt and pepper and stuff rice mixture into pork. Dust pork in flour.
- Heat pan over medium heat and add oil.
- Add pork and cook until outside is brown.
- Place in oven to finish cooking through.
Potato Gratin
- 1.5 lb Potatoes- Sliced Thin
- 2 Tbsp Butter
- 2 Tbsp Flour
- 1 Cup Milk
- 1.5 Cups Cheese
- Salt and Pepper
- 1/2 tsp Ground Nutmeg
- Preheat oven to 400 degrees.
- Add potatoes to greased baking dish.
- Warm pan over medium heat and add butter.
- Mix butter and flour together and add milk, stirring the whole time. Add nutmeg.
- When milk starts to thicken, add 1 cup cheese while stirring.
- Pour cheese mix over potatoes and top with rest of cheese.
- Cover with foil and bake 45 minutes or until potatoes are tender and cheese is melted.
I served dinner with leftover Collard Greens.
