Baked Salmon and Broccoli with Risotto for One

I made this for myself one night when Huck was out of town.

Baked Salmon
  • 1 4 oz Salmon Filet 
  • 1/2 tsp Rosemary-Chopped
  • 1 tsp Olive Oil
  • 1/2 tsp Garlic
  • Salt and Pepper to taste
    • Preheat oven to 350
    • Combined Rosemary, oil, garlic, and salt and pepper. 
    • Rub mixture onto fish. 
    •  Bake fish, on baking sheet, 12-15 minutes until fish will flack off easily with a fork. 
 Baked Broccoli and Cauliflower
  • 1/2 Cup Broccoli 
  • 1/2 Cup Cauliflower 
  • 1 tsp Olive Oil
  • Salt and Pepper to taste
    • Preheat oven to 350
    • Toss vegetables with oil and salt and pepper. 
    • Place on baking sheet in oven for 12-15 minutes or until tender.
Risotto
  • 1/2 Cup Arborio Rice 
  • 1 Cup Chicken Stock
  • 2 Tbsp White Wine
  • 2 Tbsp Onion-Chopped
  • 1 tsp Garlic-Chopped
  • 1 tsp Oil
  • 1 tsp Butter
  • 1 Tbsp Parmesan Cheese- Grated
  • Salt and Pepper to Taste
    • Heat stock in pan over medium low heat. 
    • Add oil to another pan over medium heat. Add garlic and onions and saute until soften. 
    • Add rice and coat with oil. 
    • Add wine and ladle stock in a few Tbsp at a time. Stir rice. Add more liquid when rice appears dry. Continue to stir rice.
    • When all the stock is added, stir in butter, Parmesan cheese and salt and pepper.
