Semi Retired

Today, I defined my situation as my Semi Retired phase. So what does a 26 year old Semi Retiree do.

This is a good start!!

Today, we ventured out to Stuart for lunch with one of Huck's coworkers and his wife. After reading a few reviews, I decided on Shrimpers. The website said it was water side. I'm not sure you could get closer than this without actually being in the water.

I ordered the Dolphin Jerked sandwich with Onion Rings.

This were the largest onion rings ever! The fish was really dry and the bun was twice the size of the fish. I just ate some of the bottom bun.

Huck ordered the Crunchy Grouper Ruben Sandwich with Fries. The sandwich came with slaw and thousand island dressing. His sandwich was really good. The fish was cooked well and the slaw and dressing were nice additions.


We have not found that many places down here that are waterfront, so today was a treating. Restaurants on the water are always better!!



With all the nice boats in the marina, me and Huck were talking about buying one. I think this is about all we can afford right now. 

Dinner was great. Steak... AGAIN :) 

Switched it up with a sweet potato tonight! 

Huck also, gave me a complex today:) Another one to add to the list! I have flat feet and he pointed out how my legs are bent in. This is how I normally stand. I have never really noticed how bad it is until Huck took a picture. I'm worried about Back and Knee problems now!! Just something else to worry about ;)

WIAW


What I ate Tuesday on Wednesday!

Yesterday, I laid out of work. It is one of those jobs were you get teary eyed right before you walked in the door. What will I do wrong today? How dumb will she make me feel? Are all things that go through my head on the drive to work.

I feel I am a hard worker, but this job made me feel like I'm lazy and useless. Yesterday, was my regrouping day. I couldn't handle another day there. 

Huck keeps telling me to leave. He even told me he was going to come to work and quit for me. 

A couple of weeks ago, I requested 1/2 a day off next Wednesday because my parents are coming into town and 3 days off in June for my sister Tabby's wedding. Today after arriving to work, the office manager called me into the office. There was talk of how "Slow" I am and questions of if the job was to difficult for me to handle. The usually "we plan to make you feel stupid by talking down to you". I was then informed my vacations days were not approved. I kind of laughed thinking OK I'll just tell my sister I will not make it to her wedding (I'm the Maid-of-Honor BTW). I informed them I would not be working those days and they again informed me my days were not approved. I walked out of the office and called Huck. After telling him what happened, he told me to come home. I grabbed my purse, informed the office manager I felt this was their way of getting me to quit, and it worked. And I left.  

As I walked out the door, I thought to myself "What am I doing?" I am not having good luck with jobs in Florida. I think I'm going to just stick to blogging :) 

I am starting to feel better, though. The pay check wasn't worth being unhappy! 

Now back to the food!

For breakfast yesterday, I enjoyed a Dark Chocolate and Peanut Butter Granola Bar with Pineapple Chobani. The only yogurt I like. 



For lunch, we went to Rancho Chico. I ordered the Tamale and Taco and Huck ordered the Super Burrito.  






I was still full at dinner time, but Huck was ready to eat.

I made Pork Chops with Apple Sauce, Wild Rice, and Sauteed Spinach.

The Wild Rice blend is a mix of wild rice, brown rice, and grains. I really like this blend. It is expensive but goes a long way.



I would have to say this is the best WIAW!! :)

And I have the best Fiance ever!!

Sorry Bacon... I have a new love!

I love crab legs. Some people say they are to much work. I say they are lazy! To me, the reward is well worth the work.

We ate dinner early tonight as you can tell!

First Date


4 years ago today, we had our first date. We met at a Mexican restaurant on Buford Hwy, in Buford. I'm not sure of the name. It is closed now.

We learned that we had something in common (Probably the only thing we had in common). We were unemployed. I think we both looked at the check like "I hope you're getting this!" :) After we finished dinner, we said our goodbyes, and left.

I'm sure you guys are tired of reading about how me and Huck met by now. I have enjoyed sharing our story.

Blog Name


I'm still trying to come up with a new name for the blog!! I still like Eating Through Life, but Huck said that sounds like a fat person's blog. I told him if I keep eating like I do it will be!!

Day at the Brew Bar

Today, we got ready and went to the Brew Bar. We met the guys of Brew Bar a few weeks ago at the Beer Competition. The guys behind the Brew Bar plan to have a place where people can brew their own beer using the Brew Bar's equipment. It is a great idea for people that want to learn to start home brewing or do not have to room to brew in their own home.


This is our second weekend hanging out with them. All the guys and girls are nice. It really seems like we are back in the garage in Georgia. But this time it is someone else's house :)

For lunch, we enjoyed smoked Chicken, Slaw, Fruit, Sweet Potato Fries, and French Onion Dip with Chips. I didn't want to take a picture sitting at the table with everyone so no pictures were taken, but the smoked chicken was great. I miss smoked food!!

The boys brewed a Citra Pale Ale.

 The brewing set up! 15 gallons of beer took about 6 hours.

I took my Beer Ice Cream Sandwiches with me. Everyone seemed to really like them. Even Huck who isn't a big fan of sweets.

It is really nice to meet people that share the same interest and passions. I know Huck is really excited to meet these guys. I see many Sundays of beer making in our future!

Dinner tonight was incredibly unhealthy!! But so good!! I told Huck I was throwing the rest of the container away otherwise I would kill the rest of it tomorrow. At 70 calories for 2 Tablespoons, I don't need the additional calories or fat!

Now time for bed! Staying up until 2AM last night was to much for me!!

Tomorrow night we are having crab legs!! Can't wait to share the recipe for my favorite food!!

BACON! That is all you need to know!


This may look like a very unhealthy meal, but everything is lighter versions of originally high calorie foods. Minus the bacon. I thought about buying turkey bacon, but it just isn't the same. :) 

Buffalo Wings
  • 6 Chicken Wings
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Franks Red Hot Sauce- Desired Amount
  • Salt and Pepper to taste
    • Preheat oven to 450.
    • Sprinkle seasonings on chicken. 
    • Add wings to a foil lined baking sheet.
    • Bake for 20 minutes or until cooked through. 
    • Remove from oven and toss with sauce. 
      • Serve warm with blue cheese or ranch dressing. 
Healthier than fried and no butter but still same great taste!! 

Baked Cheese Fries
Adapted from Skinny Taste
  • 3 Large Red Potatoes- Unpeeled 
  • 1 tsp Oil
  • 2 tsp Paprika
  • 1/2 tsp Ground Red Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • Salt and Pepper to taste
  • 1/4 Cup Shredded Cheese (I used 50% Reduced Fat Cabot Pepper Jack Cheese)
  • 1 Tbsp Chopped Jalapeno Peppers
  • 2 Strips Bacon- Chopped 
    • Preheat oven to 450. 
    • Slice potatoes into 1/4 inch pieces. 
    • Add oil and sprinkle on seasonings. 
    • Toss evenly to fully coat. 
    • Bake for 20-25 minutes flipping half way through. 
    • Remove from oven and transfer to oven safe dish. 
    • Sprinkle with cheese, bacon, and jalapeno peppers.
    • Return to oven until cheese is melted. 
      • Serve warm with ranch dipping sauce.     

Swiss Avocado and Bacon Turkey Burger
  • 1 lb Lean Turkey Breast (I used 97% Fat Free) 
  • 1/4 Cup Onions- Minced
  • 2 Jalapeno Peppers- Minced
  • 1 Slice Bacon- Chopped
  • Salt and Pepper to taste
  • Avocado, Swiss Cheese, Onion, Tomato, and Lettuce for toppings. 
  • Favorite Buns
    • Heat grill or grill pan to medium to medium high heat. 
    • Mix together turkey, onions, peppers, bacon, and salt and pepper. 
    • Form into 4 even patties. 
    • Grill until cooked through. 
    • Top burgers with desired toppings. 
      • Enjoy!!

Most of my day was spent thinking about new domain names for my blog. I am ready to drop the Blogspot. With Huck's job we can move any where, and I know I do not want to live in Florida for ever, so I thought about dropping the Florida. Also mylifeinflorida.com isn't available.

The story of how we met... Part 2.

Last night, I left off with us exchanging numbers. We said our goodbyes and went our separate ways. I probably wouldn't have called, but 4 years ago today, I spent the whole day laying around, bored, so I thought "I'll text the guy from last night!"

I was surprised when a few minutes later, I had a text. He said he was working in the yard and wanted to know if he could call me later. "People call each other" Who knew!

Our first phone call was about an hour long. The whole time he didn't know my name. Later, I learned the next morning he was asking everyone if they knew my name or if he gave me his number. He didn't think I would ever call.

I'll go into the details of our first date on Monday.

I would like to thank Jake for wanting to go to Wild Wing for his 21st Birthday, Josh for spilling beer all over Chelsey, Bud Light for Huck's liquid courage, and my sexy Pink Heels :)


When I got off work today, I stopped at Barnes and Noble to find something for Huck and then walked to Total Wine for him a bottle of beer. I walked up the area with the 22's and instantly knew which one to get.


We watch Diners Drive-Ins and Dives and always talk about going to some of the restaurants, so I thought he would enjoy the book. From the look on his face, I think he does!

I'm really excited to try the beer! Really Beer and Bacon! How can you go wrong??

For dinner, Huck found a recipe for Pineapple and Teriyaki Swordfish. He bought all the ingredients and had it marinating when I got home. I bought some Bok Choy and Sugar Snap Peas to cook with it.

Quinoa Fried "Rice"
Adapted from Peas and Crayons

  • 1 Cup Quinoa
  • 1 1/2 Cup Water
  • 2 Cloves Garlic
  • 2 Tbsp Low Sodium Soy Sauce or 2 Tbsp Teriyaki Sauce
  • 2 Handfuls Sugar Snap Peas
  • 1 Red or Orange Bell Pepper- Chopped
  • 2 Tbsp Real Bacon Pieces
  • 1 Egg
  • Cooking Spray
    • Mix together Quinoa and water in a pan over medium heat. Bring to a boil and cover. 
    • Cook for 15 minutes. Remove lid and fluff with fork. 
    • Saute Peas, Garlic Pepper, Onion, and Bacon together. 
    • Remove veggies and spray with cooking spray Scramble egg in pan and add veggies and quinoa back to pan. 
    • Mix in Soy or Teriyaki sauce and serve.  
 Quinoa is pronounced Keen-Wahh. It is a really get alternative to rice.


I sauteed the Bok Choy with some olive oil, garlic, and crushed red pepper. Prefect. 

He was giving me the details of how he made the fish. He mixed together teriyaki and pineapples together and marinated the swordfish in the mixture. He cooked them on the grill and splashed a little fresh orange and sesame seeds on right before serving. 
 He decided to enjoy our dinner out by the grills. We ate "out"!


All three things together were amazing!! I'm not sure what was my favorite. 
I bought the quinoa from Whole Foods a few days ago. I just scooped some out from the bin and it was exactly 1 cup! I'm that good!!


It isn't expensive either. A cup cost about a $1.

Dinner was great. I am really impressed with Huck. He came up with something different all on his own. He surprises me daily!

Tomorrow we are off to Hollywood so time for bed! :)

The story of how we met!

We really are not sure when we met. It was either late Saturday night March 22nd or early March 23rd. Every year we celebrate a different day.

 Here is our story.

Once upon a time... Two drunk people met at a bar :)

4 years ago, I was getting ready to go out to celebrate being unemployed. The day before I quit my job of 3 years and was so happy. Kind of. I hated my job, but I was saving for my trip to Italy. I was upset about not having the extra money, but happy I didn't have the stress. Earlier in the day, me and my mom went shopping, (I wasn't to worried about money I guess) where I found the coolest shoes ever and had to have them.


How can you be sad with Hot Pink High Heels on?? 

Me friend, Chelsey, picked me up and we met some friends at Wild Wing Cafe in Suwanee. I felt good in my pink heels and was ready to break them in on the dance floor. We enjoying the band, when a guy walked up to me trying to dance. I pushed him away and told him to dance with my friend.

He walks over and started dancing. Drunk would be an understatement for him. As he started dancing with Chelsey, he spills his beer all over her arm and shirt. As we all stopped in disbelief, he grabs her arm, and says "I'll clean it up!" And attempts to lick the beer off. She quickly pulled her arm way letting out a scream.

I was laughing so hard as Chelsey was having her arm cleaned by this random/drunk guy. I looked to my left, and asked the guy standing beside me, laughing, if this was his friend. Through the tears he said yes. Me and Chelsey went to the bathroom to wash off the beer and went back out to the dance floor. As we were dancing, the guy that was laughing came back up and stood behind me (creeper:)!) As we listened to 7 Sharp 9, he started dancing with me. 

Huck is the guy standing behind me in the blue and white shirt. 

We danced for a few songs then I introduced myself. Which was pointless. He didn't know my name until our first date :) 

We talked for a little while (drunk rambling) and he gave me his number. His phone was died.  

The rest of the story will be continued tomorrow...  

Today, when I got home I had a nice surprise. 


He even cooked me dinner. 

Cowboy Mac. AKA Spaghetti with bell peppers. He even took all the pictures for the blog. 






Really I have the best fiance. Hopefully next year we can celebrate our wedding date. Maybe it will not be so complicated.
