How many times can I burn myself tonight?

Tonight while cooking dinner, I managed to burn 5 of my fingers. Dinner was worth it though!

Wild Rice and Apple Stuffed Pork Chops

  • 2 Pork Chops-Butterflied 
  • 3/4 Apple-Chopped
  • 1/4 Onion-Diced
  • 1/4 Cup Wild and Brown Rice Mix
  • 2 Tbsp Pecans-Toasted and Chopped
  • 2 Tbsp Flour
  • 2 tsp Oil
  • Salt and Pepper to Taste
    • Preheat oven to 400 degrees.
    • Cook rice according to package directions.
    • Saute onions and apples and combine with cooked rice and nuts. 
    • Season pork with salt and pepper and stuff rice mixture into pork. Dust pork in flour.
    • Heat pan over medium heat and add oil. 
    • Add pork and cook until outside is brown.
    • Place in oven to finish cooking through. 
I used thick pork chops. If you are using thin you may be able to finish them on the stove.


Potato Gratin

  • 1.5 lb Potatoes- Sliced Thin
  • 2 Tbsp Butter
  • 2 Tbsp Flour
  • 1 Cup Milk
  • 1.5 Cups Cheese
  • Salt and Pepper
  • 1/2 tsp Ground Nutmeg 

    • Preheat oven to 400 degrees. 
    • Add potatoes to greased baking dish. 
    • Warm pan over medium heat and add butter. 
    • Mix butter and flour together and add milk, stirring the whole time. Add nutmeg. 
    • When milk starts to thicken, add 1 cup cheese while stirring.
    • Pour cheese mix over potatoes and top with rest of cheese. 
    • Cover with foil and bake 45 minutes or until potatoes are tender and cheese is melted. 

I served dinner with leftover Collard Greens.
